Yummy Flourless Cookies

Ken has a coworker who can't eat gluten. She made these cookies and brought them in to work and Ken liked them so much that he asked for the recipe. I love them, and now, if I make Peanut Butter Cookies, I usually make these, because they are super easy to make and taste delicious.

Flourless Peanut Butter Cookies

1 cup creamy peanut butter
1 cup white sugar
1 tsp baking powder
1 egg

(I usually double or triple the recipe)

Preheat Oven to 350

Cream together peanut butter and sugar in a bowl. (Works well when mixed by hand or with hand held mixer, stand mixers don't work very well on small batches.) Beat in baking powder and add egg. Mix until well combined

The dough will be sticky, be prepared to get your hands messy. Roll some dough into a ball. (The smaller the ball/cookie the better it holds together, larger cookies are also gooier in the middle.) Roll ball in white sugar and place on baking sheet.

Bake for 10 minutes. Cookies are done when they feel coherent, but still a little soft. Take the tray out of the oven and let the cookies rest for at least 5 minutes, then carefully transfer the cookies to a cooling rack. After 10 minutes they will have hardened and be glistening with sugar.
Eat them!

These would have been great the other day when I had to make a sweet for something but was out of flour! I can't wait to try them though. They look yummy! You're such a chef! And thanks for your comments on my blog--I really need/appreciate the advice and support! =) How's pregnancy going? Any weird cravings?
